Elderberry Jam - A Recipe for a Healthy Harvest.


Elderberry has always been known for its healing properties. One of the tastiest and most beneficial ways to preserve these properties for winter is to make jam.

You will need:
- elderberry - 1 kg;
- sugar - 1 kg.
Method of Preparation
Wash the elderberries thoroughly under running water, removing twigs, leaves, and unripe or damaged berries. Let the water drain completely to prevent excess moisture from getting into the jam.
Pour the cleaned berries into a deep pot and sprinkle with sugar. Gently mix to avoid crushing the berries - they should remain whole. Leave for a few hours to allow the elderberries to release juice and the sugar to partially dissolve.
After this, place the container on the stove and cook on very low heat. It is important not to bring it to a rolling boil - the jam should only shimmer slightly. Cook for approximately 45 minutes, periodically removing the foam and stirring with a wooden spoon.
After the first cooking, remove the pot from the heat and allow the jam to cool completely. When the jam cools, cook it for another 5 minutes.
Pour the hot jam into previously sterilized jars. Seal with sterilized lids, turn upside down, and wrap well with a blanket or towel. Let the jam cool, then turn the jars back over.
